Fructose, also known as "fruit sugar," is a type of naturally occurring sugar that can be found in a variety of foods, including honey, sugar beets, sugar cane, and a variety of fruits and vegetables, including artichokes, asparagus, mushrooms, onions, and red peppers. Fruits and vegetables that contain fructose include apples, dates, figs, pears, and prunes. Commercial production of pure fructose from corn or sucrose results in crystalline fructose that is used as an ingredient in packaged foods and drinks. Although the monosaccharides fructose and glucose are mixed in high fructose corn syrup (a 55:45 ratio), fructose, crystalline fructose, and high fructose corn syrup are not the same thing.
