Some great simple pasta recipes
One of my go to easy decadent meals is Bacon Carbonara.
I usually pair this with some flattened Japanese breaded pork katsu (think pork cutlets), but the pasta is great on it’s own.

Bacon Carbonara

INGREDIENTS

·        1 box (about 375–400 gor almost 1 lb) Spaghetti orbetter, Spaghettini or Angel Hair

·        8 slices THICK smoked bacon

·        2 cups of 15% Cream (or thicker)

·        2 eggs

·        1 1/2 cups of Parmesan cheese, shredded orgrated. (Grana Padano or Parmigiano-Reggiano would be better but abit $$$ in these amounts)

·        2 tsp black pepper

·        2 tbsp Italian parsley

·        (OPTIONAL) 1/8 cup butter (about 1/4 of a stick)

·        (OPTIONAL) 1 cup thinly sliced mushrooms

INSTRUCTIONS

1.       Cook the pasta in salted water until aldente. Remove the pasta, andthen shock with cold water to stop the pasta from cooking further.

2.       Dice up the bacon and cook on the skilletunder medium heat until crispy. Set aside.

3.       (OPTIONAL) Add the butter to the skillet and mixwith the bacon fat. Add the mushrooms and saute in the fat and butter untilcooked. Set aside.

4.       In the bacon (and optional butter) fat, stir inthe cream. Once mixed, stirin the eggs. Then add 1 CUP of the cheese and black pepper and stir until blended.

5.       Add the pasta and the bacon (andmushrooms) to the mix andstir.

6.       Serve and garnish with the parsley and theremaining cheese.


This makes a fantastic side dish with a breaded Japanese Katsu, or typical chicken or pork cutlet of any sort. And Iwould recommend a Merlot orPinot Noir to go with it. You needthat flavor to cut throughall that fat and butter andcheese. A strong beer would also be a good match.
